As promised, here is the recipe for one of our favorite family desserts....Blueberry Pudding Cake...YUMM! It comes from an old church cookbook that I've had for about a 100 years. :)
If you like blueberries, you will probably love this!
Here's the recipe:
Cake:
2 cups blueberries 1 cup flour
3 Tbsp Crisco (not oil) 1 tsp baking powder
3/4 cup sugar 1 cup boiling water
1/2 cup milk
Topping:
1/4 cup sugar
1/4 tsp salt
1 tsp cornstarch
Preheat oven to 350. Put berries in bottom of 8 x 8 greased pan. Blend Crisco, sugar, milk, flour and baking powder by hand. Spread over blueberries. Combine topping and sprinkle over batter. Pour the 1 cup boiling water over topping. Bake for 50 - 60 minutes.
*Note: I always double the recipe in a 13 x 9 pan for our family...an 8 x 8 pan just ain't gonna cut it! It will take a bit longer; but once it's golden brown on top, YOU'RE GOLDEN! :)
